Caprese Salad with Sacha Inchi Oil

Ingredients

  • Tomatoes | 3-4 large
  • Fresh Mozzarella | 4 oz
  • Fresh Basil | 1 bunch
  • Sacha Inchi Oil | 2 Tbsp
  • Salt and Pepper | To taste

Directions

  1. Slice the tomatoes, discarding the ends. Cut the mozzarella into 2- to 3-inch round slices. Remove 8 basil leaves from the stems.
  2. On each of 4 plates, stack the salad with one slice of tomato, a basil leaf, one slice of mozzarella cheese, one slice of tomato, and top with basil leaf. Garnish with a drizzle of sacha inchi oil. Season with salt and pepper. Enjoy!
