Grown high in the Andes Mountains of Peru, Maca (Lepidium meyenii) has been used by the Inca and earlier Peruvian cultures for more than 1,500 years. For maximum health benifits, our Maca powder is a blend of a multitude of maca root colors found naturally in each harvest. It is grown without chemicals or herbicides, and the roots are sun-dried upon harvest.
Gelatinization is a process in which the hydrogen bonds in the starch are broken by the kinetic energy of heated water. Starch granules in water swell with increased heat until they reach the gelatinization temperature. When water is added again, the starch can reabsorb large amounts of water without long periods of heating. Gelatinized starch is much more rapidly digested by enzymes than is raw starch. For people seeking more bio-availability of the carbohydrate content of Maca (i.e. the energy giving polysaccharides), gelatinization essentially provides a “pre-digested” energy source that is more readily absorbed by the human gastrointestinal tract. During this process, the live active enzymes are destroyed.
